Italian Meats with Fresh Mozzarella Panini

  • 4 crusty rolls, sliced in half
  • 1/4 cup melted butter
  • Assortment of Italian Meats Italian Dry Salami, Pepperoni, Hot Capocollo, or Prosciutto
  • 8 slices of fresh mozzarella
  • 1/2 cup of sundried tomato pesto
  • Fresh Basil
  • Olive Oil

Preparation: Preheat griddle pan for medium heat. Brush bread with melted butter. Place cheese on 4 slices of bread. Top with assortment of Italian meats and fresh basil. Spread pesto on topside of bread. Brush both sides of sandwiches with oil and place on the griddle. Place a brick wrapped in foil on top of sandwich and cook for about 2 minutes, or until cheese is melted. Remove from heat and serve.
