MADISON, MS (WLBT) - Chef Emeril Lagasse was teeing up some good eats at the Viking Classic Thursday. The famous New Orleans chef conducted a cooking demonstration in the Viking culinary tent.
The menu featured brazened artichokes, lobster corn salad and fruit cobbler for dessert.
A crowd of over a hundred people were in attendance. Cooking demonstrations featuring some local chefs will run through Sunday.
Emeril told reporters he had been trying to get to the event for several years, but his schedule never allowed it.
"To see what an undertaking this is and yet the commitment that goes with this from Viking, from the sponsors that are here from the PGA, it's incredible", said Lagasse.
Tickets to his event cost $100.00. All proceeds will be donated to the Blair E. Batson hospital.
Viking Culinary Group President Joe Sherman said, "There's nobody else we can identify with, has made southern cooking, Creole cuisine as big as he has."
Emeril was also promoting his new book, Farm To Fork. It's a collection of recipes using fresh ingredients.
Lagasse owns a farm near Meridian where he grows all the vegetables, and raises cattle for food he uses in his restaurant.
He says that allows him to control the quality of the food, without the use of lots of chemicals.
