Red beans and Sausage
a bag of red beans
one medium onion
one medium bell pepper
two bay leaves
a teaspoon of thyme
any type of sausage of your choice:
a tablespoon of garlic
Cook: sauté onions, bell peppers and sausage. Add thyme, bay leaf and garlic. Let those caramelize. But, take out your sausage. Add your beans and water and let them cook halfway. Then re-add your sausage. Cook until done.
Sweet Potato Yams
4 medium sweet potatoes peel and dice.
Cook: Place into a medium sauce pot. Add 4 tablespoons of sugar. Add a half stick of butter. Throw in a teaspoon of nutmeg. You can add either lemon and/or almond flavor – 1 teaspoon. Throw in one pinch of salt. And cook at very low heat.
Cabbage wash and cut your cabbage. Place into pot. Add a pinch of salt and pepper. Add two tablespoons of butter. Cook on very low heat and let them steam.
