Emeril cookin' at the Classic

MADISON, MS (Mississippi News Now) -

PGA Golf attracts crowds to Annandale for the Viking Classic. But under Thursday's hot sun, spectators found cool relief inside the culinary tent, watching a cooking demonstration by Emeril Lagasse.

Relaxing the crowds first with a watermelon margarita recipe, Emeril then moved on to stuffed artichokes, and Brazilian chicken thighs, which the audience got to sample.

Emeril is generous with seasoning.

"You can add basil, oregano, thyme," he says.

He's also generous of heart. He nurtures young people through the culinary arts through his foundation, and all of the proceeds from the Viking Classic demos will go to the Blair E. Batson Children's Hospital.

"A lot of the people that look up to me are children," he says. "My efforts, whether it's the foundation or the children's hospital, are important to me to give the kids a chance."

Emeril gets the herbs and produce for his restaurants from Meridian, Mississippi.

"There's a lot of great things about Mississippi. Besides its people, one of the great things about Mississippi is its soil," he says. "There's some beautiful okra right now, tomatoes are getting beautiful, the melons are great right now, salad greens."

Emeril encourages us to keep meals light, and to educate our children about eating light as well.
