Sweet Potato Pancakes w/ Pulled Pork and Spicy Cole Slaw, plus Chipotle Cream Sauce

Ingredients for Pancakes:

  • 1 1/2 cups of all-purpose flour
  • 3 1/2 teaspoons of baking powder
  • 1 teaspoon salt 1/2 teaspoon ground nutmeg
  • 1 1/4 cups of mashed cooked sweet potatoes
  • 2 eggs, beaten
  • 1 1/2 cups milk
  • 1/4 cup butter, melted


Sift dry ingredients into a mixing bowl. Combine remaining ingredients; add to flour mixture, stirring just until dry ingredients are moistened. Preheat a lightly greased griddle over medium-high heat.

Drop batter mixture onto the prepared griddle by heaping teaspoonfuls, and cook until golden brown, turning once with a spatula when the surface begins to bubble.

Assembling Dish:

On individual dish place one sweet potato pancake and top with desired amount pulled pork.

Then top with Spicy Cole Slaw (recipe below) and Chipotle Cream Sauce. Enjoy!

Spicy Cole Slaw:

  • 16 ounces shredded green cabbage
  • 1 cup of shredded carrots
  • 1 cup of shredded red cabbage
  • 1 cup of red bell pepper, julienned
  • 1/2 cup of green onions, thinly sliced
  • 1/4 cup of diced jalapeno peppers
  • 2 cloves of minced garlic
  • Sea salt and freshly ground black pepper to taste 

Toss together until well combined.
