Thai Peanut Noodles with Pork Tenderloin

Ingredients:

  • 1/3 cup of light coconut milk
  • 1/2 cup organic no salt-added tomato sauce
  • 1/4 cup unsalted, natural peanut butter, either crunchy or smooth
  • 2 tablespoons Thai fish sauce
  • 3 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1/4 teaspoon crushed red pepper flakes
  • 1&1/2 pounds of grilled pork tenderloin, sliced
  • 8 oz. whole wheat bowtie pasta
  • 2 cups of thinly sliced ice berg lettuce
  • 1/4 cup of chopped green onion
  • 3 tablespoons chopped fresh mint
  • 3 tablespoons chopped fresh cilantro
  • 3 tablespoons unsalted peanuts, chopped

Directions:

In a large bowl whisk coconut milk with tomato juice, peanut butter, fish sauce, lime juice, honey and pepper flakes.

Set aside.

Bring a large pot of water to boil on high heat. Cook noodles according to package directions or until tender, about 6 minutes. Drain and rinse well.

To dressing add cooked noodles, lettuce, green onion, mint and cilantro and toss well. Add sliced pork and serve topped with peanuts.
