Parmesan Crusted Cod

Ingredients:

  • 1/2 Cup panko bread crumbs
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon of minced fresh lemon zest
  • 8 teaspoons sundried tomato pesto
  • 4 cod filets

Directions:

Preheat oven to 450-degrees. Coat a baking sheet with nonstick spray (or use a silpat baking sheet).

Combine panko bread crumbs, parmesan, and zest in a bowl. Spread 2 teaspoons pesto on one-side of each fillet and arrange on prepared baking sheet. Press panko mixture onto pesto side of fillets and lightly coat with nonstick spray.**

Roast filets until crumbs are golden brown and flesh flakes with a fork; approximately 10-12 minutes.

*Halibut can also be used.

**to help the bread crumb crust brown in the oven, lightly coat the filets with a nonstick cooking spray.
