Ingredients:

• 4 peaches, pitted and chopped
• 1 cucumber, seeded and chopped
• 1/2 cup of diced sweet white onion, chopped
• 1 jalapeno pepper, seeded and chopped
• 2 tablespoons of chopped mint
• 2 tablespoons of chopped basil
• Juice of 1 lime
• Dash of olive oil
• Salt and pepper to taste

Directions:

Combine all ingredients in a bowl and toss gently. Refrigerate until ready to serve.

Great with grilled chicken or fish.
