Put the beans in a medium bowl and mash the beans with a fork to a coarse puree. Set aside.
In a pot or sauté pan heat olive oil and add onion, garlic, bell pepper, salt and pepper. Cook for about 2 minutes or until vegetables are wilted; add sausage and thyme and cook for another 2-3 minutes. Add red beans and heat thoroughly.
Put a dollop of the red beans mixture on a triscuit or your favorite cracker and top with some green onions.
