Fresh From the Flame - Cajun Red Beans & Sausage Appetizer

Ingredients:

  • 1 15-ounce can red kidney beans, washed and drained
  • 2 tablespoons olive oil
  • 1/2 cup of diced onion
  • 2 cloves of chopped garlic
  • 1/2 cup of chopped yellow bell pepper
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 3/4 cups of diced cooked smoked sausage
  • 1 teaspoon of dried thyme
  • Pinch of cayenne pepper
  • 1/4 cup chopped green onion
  • Triscuits or favorite crackers

Directions:

Put the beans in a medium bowl and mash the beans with a fork to a coarse puree. Set aside.

In a pot or sauté pan heat olive oil and add onion, garlic, bell pepper, salt and pepper. Cook for about 2 minutes or until vegetables are wilted; add sausage and thyme and cook for another 2-3 minutes. Add red beans and heat thoroughly.

Put a dollop of the red beans mixture on a triscuit or your favorite cracker and top with some green onions.
