JACKSON, MS (Mississippi News Now) -

Laughter and food filled the air at the 153rd Mississippi State Fair.

My mission was simple, walk the midway and find the most unusual food.

The typical favorites are here at the fairgrounds. Then there are healthy options, like a salad.

However, there's a unique spin on the menu, a cucumber filled with chicken or seafood salad.

"It's cored all the way down to the bottom and then we stuff it all the way to the top with whatever stuffing the customer wants," explained the Kansas native vendor.@

He believes the healthier option can be a hit.

"We wanted to come up with a fair threat that was kind of light, different, but yet it was still fun to eat."

Basically, you eat it like a hotdog.

The next stop on the food mission was fried, fried mac and cheese at Funny Face Foods but it was nothing to laugh about.

"We want to do something new, in addition to our menu every year," explained owner Jack Beasley.

And the new food is a what I considered a fried treat.

Then there are kool-aid pickles.

"(It's) Kool-aid that's been sitting up for about four days and you just dump that into a jar of pickles and you have cherry kool-aid pickles," explained Beasley.

You can taste the Kool-aid, for sure.

The next stop took us to another first year treat at the fair, alligator on a stick.

The deep fried gator is from Louisiana but doesn't have a bite, just Cajun seasoning.

The offer to try the food was one I couldn't refuse. I've been told it tastes like chicken and guess what? It does.

The fair offers almost everything for your pallet.
