Fresh From the Flame - Italian Sausage Biscuit

Italian Sausage & Fontina Biscuit Sandwiches


  • 1 teaspoon extra-virgin olive oil
  • 1/2 pound Italian sausages, crumbled in skillet
  • 1/4 cup minced sundried tomatoes
  • 1/2 cup of chopped green onions
  • 1/4 cup of chopped roasted peppers
  • 3 tablespoons freshly grated parmesan cheese
  • 3/4 cup shredded fontina cheese
  • Salt and freshly ground black pepper
  • 8 baked biscuits, split in half


In a medium skillet, heat the olive oil. Add the sausages, cover and cook over moderate heat until nicely browned and cooked through, approximately 10 minutes. Add the sundried tomatoes, roasted peppers, green onions, parmesan cheese, 1/4 cup of the fontina cheese and season with salt and pepper. Mix well.

Place sausage mixture on split warm biscuits and sprinkle with additional fontina cheese. Close the sandwiches and serve.

These may be made ahead and wrapped in foil and refrigerated. Heat in a 300-degree oven until warm.
