Plum Chutney w/ Pork Sliders
Peel plums, if you desire, then halve and remove. Cut plums halves into 1/2 inch wedges.
Heat oil in a medium saucepan over medium heat. Add shallot and cook until they begin to soften (approximately 2 minutes). Add brown sugar, and the remaining ingredients except salt. Cook, stirring occasionally, for approximately 3 minutes. Stir in plums. Cover and simmer over medium heat, stirring occasionally for approximately 8 minutes. Uncover and continue cooking, stirring occasionally until fruit is soft and juices have thickened, approximately 30 minutes. Season to taste with salt.
Let cool slightly. Cover and chill. Re-warm slightly before serving.
