What you'll need:
Preheat oven to 350-degrees. Spray a 13 x 9 inch backing dish sprayed with nonstick cooking spray. Then wash and slice potatoes and set aside.
Mix cream cheese, sour cream, chicken stock, and onions in a large bowl until well blended. Add potatoes and 8 ounces of cheddar cheese and stir gently to evenly coat all ingredients.
Spoon potato mixture into prepared baking dish and top with remaining cheese.
Bake 1 hour or until casserole is heated through and potatoes are tender.
