- 4 cups avocados, diced
- 2 cups grape tomatoes
- 1 medium cucumber, peeled and diced
- 1 red onion, diced
- 1/3 cup fresh cilantro, chopped
- 2 cloves garlic, minced
- 2 tablespoons fresh lime juice
- 1/3 cup olive oil
- Salt and fresh ground black pepper
- 4 cups mixed greens
Combine first 6 ingredients in a large bowl. Whisk together lime juice, olive oil, salt and pepper.
Toss the dressing with the cut vegetables and serve on a bed of lettuce.
