Fresh Strawberry & Avocado Spinach Salad w/ Champagne Vinaigrette

  • 2 tablespoons champagne vinegar
  • 3/4 cup extra virgin olive oil
  • 1/4 cup honey
  • Salt and pepper to taste
  • 8 ounces baby spinach, washed and dried
  • 2 cups strawberries, quartered
  • 1 avocado, thinly sliced
  • 4 ounces Feta cheese
  • 1/2 cup pecans, roughly chopped and toasted


In a small bowl, whisk together the champagne vinegar, olive oil, honey and salt and pepper until well combined.

In a salad bowl layer the spinach, strawberries, avocado slices, Feta cheese and pecans. Serve with the vinaigrette.

Note: this is wonderful topped with left roasted chicken or grilled shrimp.
