Cilantro Lime Shrimp


  • 1/2 cup very thinly sliced red onions
  • 1/2 cup finely sliced red bell pepper
  • 3 garlic cloves, minced
  • 1/4 cup lime juice
  • 1/4 teaspoon salt
  • 2 dashes hot sauce
  • 2 tablespoons olive oil
  • 2 pound large shrimp, peeled and deveined
  • 2/3 cup chopped cilantro, plus more for garnish
  • Freshly ground pepper


In a medium bowl, toss together the onion, bell pepper, garlic, lime juice, salt, hot sauce and let marinate for 15 minutes.

In a large sauté pan over medium-high heat, heat the olive oil. Add the onion and bell pepper mixture, the shrimp, and 2/3 cup cilantro. Sauté until the shrimp are just cooked through, about 5 to 7 minutes. Season to taste with salt and freshly ground black pepper.

Tip: great hot or cold as an appetizer or over pasta for a meal.
