One day before the Mississippi State Fair opens, inspectors with the State Department of Health are making sure food vendors are following all the safety rules.

Our cameras went along Tuesday as teams checked food storage, hand washing facilities, and cooking areas. The inspectors will award permit stickers to those who pass inspection, and that's what consumers need to look for when on the hunt for good fair food.

"Just the inspection sheet is not OK, you are looking for the permit. This is how we show they're permitted, and it will have this event's date on it," says Ann Hogue, District Environmentalist with MSDH.

Some vendors will require more frequent checks than others.

"We had a fella serving and fixing sushi down here last year, so we spent a lot of time with him being sure all the regulations were maintained and everything was safe," Hogue tells us.

Inspectors will check on food vendors periodically during the fair, and they will also investigate complaints.
