Sausage Stuffed Red Fish


  • 1 lb. Sausage, diced
  • 1 cup Chopped Celery
  • 1 cup Chopped Onion
  • 1 cup Bell Pepper
  • 12 oz. Corn Meal
  • 12 oz. Crumbled Stale French Break
  • 1 tbls. Secret Spice Mix
  • 1 tbls. Rubbed Sage
  • 3 cups Chicken Stock

Saute' sausage, celery, onion and bell pepper in heavy skillet until browned, about :15 minutes.  Transfer to a bowl, add other ingredients.  Toss well, place in backing dish and cook on grill for :20 minutes

Prepare fillets by cutting deep pockets.  Stuff with cool sausage mixture.  Cook over moderate heat for :05 minutes per side.  Serve over bed of Mashed Sweet Potatoes.
