Blue Cheese and Pear Salad

  • 1 Bunch Arugula, torn (see note below)
  • 1 Head Romaine lettuce, torn
  • Freshly ground black pepper, to taste
  • 3 Medium pears (red if available), cored and thinly sliced
  • 2 Tbsp. crumbled blue Cheese
  • 1 Medium Garlic clove, minced
  • 3 Tbsp. Walnuts, toasted and chopped
  • 1/2 c. Non-Fat Buttermilk


In a small bowl, combine buttermilk, cheese, garlic and pepper.  Set aside.  Combine arugula and romaine in large salad bowl.  Toss dressing with lettuce in bowl.  Divide dressed salad between 6 salad plates.  Top with sliced pears and sprinkle with walnuts.  Serve immediately.

NOTE:  Fresh Spinach may be substitute for arugula.
