Citrus Green Beans

  • 2 lbs. Fresh Green Beans, Trimmed
  • 2 Tbsp. Walnut Oil
  • 3 Tbsp. Canola Oil
  • 1 tsp. Lemon Zest
  • Juice of 1 Lemon, or 2 tsp. bottled
  • 1/8 tsp. Salt
  • Freshly Ground Black Pepper

in a large saucepan of boiling lightly salted water, cook green beans until just tender, about 5 to 8 minutes.  While they are cooking, whisk together the two oils, lemon juice and zest.  Drain beans and toss with dressing while still hot.  Season lightly with salt and add freshly ground pepper to taste.
