Light Cornbread Squares

  • 1 1/2 c. yellow cornmeal
  • 1/2 c. all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 2 packets (tsp.) Splenda
  • 1 2/3 c. nonfat buttermilk
  • 1/4 c. egg substitute
  • 2 Tbsp. canola oil
  • vegetable cooking spray

Directions:

Preheat oven to 400 degrees.  Combine first 6 ingredients in a large bowl; make a well in center of mixture.  Combine buttermilk, egg substitute, and oil; add to dry ingredients, stirring just until dry ingredients are moistened.  Pour batter into an 8-inch square pan coated with cooking spray.  Bake at 400 degrees for 20 to 25 minutes or until golden.  Cut into squares.  Yield:  9 servings.
