Burshetta with Tomatoes

BRUSCHETTA WITH TOMATOES  

  • 3 medium tomatoes, very ripe
  • 1 bunch fresh basil (about ¾ cup), chopped
  • 2 tsp. extra virgin olive oil
  • 2 cloves garlic
  • 6 slices Italian bread, preferably a coarse, country style
  • Salt and pepper to taste  

     Chop tomatoes into small pieces and allow torest for a few minutes.  Combine with the chopped basil and olive oil in a small bowl.  Peel garlic and cut each clove in half.  Toast the bread on a grill, under a broiler, or in a toaster.  Rub the toasts with cut side of the garlic.  Place about 3 tablespoons of the tomato mixture with cut side of the garlic.  Place about 3 tablespoons of the tomato mixture on each toast.  Place tomato topped toasts on a serving tray and serve as an appetizer.  This makes an especially pretty dish at Christmas with vibrant colors of red and green. Yield:  6 appetizer servings
