  • 2 (15 oz.) cans chickpeas (garbanzo beans)
  • 3 small garlic cloves
  • 1/4 cup plus 1 tablespoon tahini paste (see note)
  • 1/4 cup fresh lemon juice
  • 3 Tbsp. water  

     Drain chickpeas, reserving 1/4 cup liquid.  Rinse chickpeas and set aside.  Drop garlic through food chute with food processor on; process 10 seconds or until minced.  Add chickpeas, reserved ΒΌ cup liquid, tahini paste, lemon juice and water; process 3 minutes or until smooth, scraping sides of bowl occasionally; spoon mixture into a serving bowl.  Serve immediately or cover and chill.  Serve with pita triangles or raw vegetables. Yield: 3 cups.

Note:  Tahini is a paste made of ground sesame seeds and is used in many Middle East recipes.  You can find it in large supermarkets near the other sauces and spreads.
