Orange Chicken Skewers with Sesame Honey Mustard Dipping Sauce

  • 4 boneless, skinless chicken breasts, cut into strips
  • 1 cup orange marmalade
  • 2 lemons juiced and zest
  • 1 cup chicken broth
  • Kosher salt to taste
  • White pepper to taste
  • 1/2 cup honey
  • 1/2 cup mustard, your favorite kind
  • 1/2 cup low-fat mayonnaise
  • 2 Tbsp. sesame seeds, toasted
  • 8 wooden skewers, soaked in water for at least 30 minutes  

Season chicken with salt and pepper.  Combine orange marmalade, lemons, and chicken broth.  Place chicken in marinade overnight or for least 1 hour.  Combine honey, mustard, mayonnaise, and sesame seeds for dipping sauce and refrigerate until needed.  Skewer the chicken and grill, 2 minutes per side, on both sides.  Serve immediately with dipping sauce.
