Turkey Soup

  • 2 cups of diced cooked turkey breast
  • 2 medium onions
  • 1/2 cup of  minced carrots
  • 3 stalks of celery
  • 3 tablespoons of olive oil
  • 2 quarts of defatted turkey stock*
  • 1 tsp thyme
  • 1/2 tsp rosemary
  • 1/2 tsp sage
  • 1 tsp basil
  • 1/2 tsp marjoram
  • 1/2 tsp tarragon
  • 1/2 tsp salt
  • pepper to taste
  • 8 oz. of no-yolk noodles  

Cut onions in large pieces and slice celery.  Saute in olive oil until wilted.  Add turkey stock and bring to a boil.  Lower heat to medium and add diced turkey meat, herbs and spices to turkey stock and simmer for 30 minutes. 

Bring back to a boil and add noodles. Continue cooking on low boil for about 20 minutes or until noodles are tender.  Taste and adjust seasonings as necessary.
